This kind of in-home care varies quite a bit from place to place. In cities with large Chinese communities, like Toronto and Vancouver, it's relatively easy to find a caregiver who speaks fluent Mandarin, but in smaller cities your options may be more limited. Also, some provinces have labor protection rules for live-in caregivers—things like working hours, time off, and insurance—so it's best to look into these before you start negotiating, to avoid disputes later on.
Caring for an elderly person may look easy, but you need to draw clear lines around responsibility first: who's accountable for falls, sudden illness, or medication? If it's just companionship and light housework, that's a different matter from needing nursing care. It's best to first clarify how independent the elderly person is, otherwise you can easily overestimate your own abilities.
Call first to clarify the hours and how taxes are handled before making a decision.

Specifically, will I be responsible for cooking, or is it just chatting?
